Veggie-Loaded Chocolate Pecan Butter Smoothie
Makes 1-2 smoothies
Smoothies are one of our favorite quick meals when time is tight, especially during those steamy Georgia summers. You can play around with flavors, textures and toppings, but one thing’s for certain: a smoothie is the perfect way to sneak in a serving or two of vegetables that even the biggest veggie haters won’t detect. Here, frozen zucchini and cauliflower add fiber, vitamins and minerals and that coveted creamy consistency. We promise you won’t taste it. And between the banana and that Sweet Potater Pie pecan butter, no added sweeteners are needed either. Sounds pretty smooth to us.
INGREDIENTS:
- 1 cup nut milk
- 1 banana
- 1 tbsp Sweet Potater Pie pecan butter, plus extra for garnish
- 1 small zucchini, chopped + frozen
- handful of frozen cauliflower florets
- 1 tbsp cacao powder
- few shakes of cinnamon
- handful of ice cubes
INSTRUCTIONS:
Blend everything in a high-powered blender until smooth, then serve with a drizzle of pecan butter on top.
