Grain-Free Pecan Streusel Sweet Potato Bake
Makes 8 servings
- 3 sweet potatoes, rinsed
- 1/2 cup coconut milk
- 1 tsp vanilla
- 1/2 cup Purely Pecans Grain-Free Granola
- 1/2 cup coconut sugar
- 1/2 cup almond flour
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 6 tbsp cold butter, cut into small cubes
Poke holes all over sweet potatoes and bake at 425 degrees for 50 - 60 minutes, until the fork pierces the potato easily. Let cool, then peel. Turn down the oven to 350 degrees.
In a food processor, puree sweet potatoes with coconut milk and vanilla until smooth. Spread evenly in a greased baking dish.
In a mixing bowl, combine granola, coconut sugar, almond flour, cinnamon and salt. Add in butter and press into dry mixture with fingers, until mixture resembles damp sand.
Sprinkle on top of sweet potato puree and bake at 350 degrees for 20 - 30 minutes, until the top is golden.
